Falafel
Ingredients
  • 1 cup dried chickpeas
  • 1/2 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • 3 tablespoons chopped fresh parsley leaves
  • 3 tablespoons chopped fresh cilantro leaves
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Steps
  1. Soak the chickpeas in water overnight.
  2. Drain and rinse the chickpeas.
  3. In a food processor, combine the chickpeas, onion, garlic, cumin, coriander, baking powder, parsley, cilantro and flour. Pulse until everything is finely chopped.
  4. Form the mixture into small balls or patties.
  5. Heat oil in a large skillet over medium heat. Fry the falafel until golden brown on both sides.
  6. Drain on paper towels and season with salt and pepper to taste.
