Falafel Patties
Ingredients
  • 1 cup dried chickpeas, soaked overnight
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon baking soda
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste

Steps
  1. In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cumin, coriander and baking soda. Pulse until the ingredients are finely chopped.
  2. Transfer the mixture to a bowl and stir in the flour. Season with salt and pepper.
  3. Form the mixture into patties about 1/2 inch thick.
  4. Heat a skillet over medium-high heat. Add enough oil to lightly coat the pan. Fry the patties until golden brown on both sides.
  5. Serve hot or cold.
