Fajita Salad Wraps
Ingredients
  • 1/2 lb. boneless skinless chicken breasts, cut into strips
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/4 cup chopped onion
  • 1 teaspoon olive oil
  • 3 tablespoons salsa or taco sauce
  • 4 (10-inch) flour tortillas
  • 1 cup shredded lettuce

Steps
  1. Heat the oil in a large skillet over medium-high heat. Add the chicken strips, bell peppers, and onion. Cook and stir until the chicken is cooked through and the vegetables are tender.
  2. Stir in the salsa or taco sauce.
  3. Warm each tortilla in a separate skillet over medium heat for about 30 seconds per side.
  4. Divide the chicken mixture among the four tortillas. Top with lettuce.
  5. Roll up and serve.
