Ingredients
  • 1 lb. boneless skinless chicken breasts, cut into strips
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 bell peppers, thinly sliced (any color)
  • 1 onion, thinly sliced
  • 2 tablespoons freshly squeezed lime juice

Steps
  1. Heat a large skillet over medium-high heat. Add the olive oil and chicken strips and cook for 5 minutes until lightly browned. Add the garlic, cumin, chili powder, paprika, cayenne pepper (if using), salt and pepper to taste. Cook for another 2 minutes.
  2. Add the bell peppers and onions to the skillet. Cook for an additional 5 minutes or until vegetables are tender.
  3. Add the lime juice to the skillet and stir everything together. Remove from heat.
  4. Divide the fajita mix among 4 bowls and serve.
