Eggs Royale
Ingredients
  • 2 English muffins
  • 2 slices of smoked salmon
  • 4 eggs
  • 1 tablespoon of butter
  • 1 tablespoon of white wine vinegar
  • 2 tablespoons of double cream

Steps
  1. Toast the English muffins until golden brown.
  2. Place the smoked salmon on top of each muffin.
  3. Poach the eggs in a pan of boiling water with the vinegar for 3-4 minutes until cooked to your liking.
  4. Melt the butter in a pan and add the cream and simmer for 1 minute.
  5. Spoon over each egg.
  6. Serve with a sprinkle of freshly chopped parsley.
