Eggplant Rollatini
Ingredients
  • 2 large eggplants, cut into 1/4-inch slices
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 (24-ounce) jar marinara sauce
  • 3 cups ricotta cheese
  • 2 eggs, lightly beaten
  • 1 teaspoon dried oregano leaves

Steps
  1. Preheat oven to 375 degrees F.
  2. Brush both sides of eggplant slices with olive oil and season with salt and pepper.
  3. Place in a single layer on a baking sheet and bake for 15 minutes.
  4. Remove from oven and sprinkle with Parmesan cheese.
  5. In a 9x13-inch baking dish, spread 1 cup of the marinara sauce over the bottom.
  6. In a medium bowl, mix together the ricotta cheese, eggs, and oregano leaves.
  7. Spread about 2 tablespoons of the ricotta mixture onto each slice of eggplant and roll up.
  8. Place seam side down in the baking dish over the marinara sauce.
  9. Pour remaining sauce over top and sprinkle with additional Parmesan cheese if desired.
  10. Bake for 25 minutes or until bubbly.
