Eggplant Parmesan
Ingredients
  • 1 large eggplant
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup Italian-style bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Steps
  1. Slice the eggplant into 1/4 inch thick rounds.
  2. In a shallow bowl, mix together the flour, eggs, bread crumbs, Parmesan cheese, oregano, garlic powder, salt and pepper.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Dip each eggplant slice into the flour mixture to coat. Place in the hot skillet and cook for about 3 minutes per side until golden brown.
  5. Drain on paper towels and place on a baking sheet.
  6. Top with your favorite marinara sauce and bake at 350 degrees F (175 degrees C) for 20 minutes. Sprinkle with additional Parmesan cheese before serving.
