In a shallow bowl, mix together the flour, eggs, bread crumbs, Parmesan cheese, oregano, garlic powder, salt and pepper.
Heat the olive oil in a large skillet over medium heat.
Dip each eggplant slice into the flour mixture to coat. Place in the hot skillet and cook for about 3 minutes per side until golden brown.
Drain on paper towels and place on a baking sheet.
Top with your favorite marinara sauce and bake at 350 degrees F (175 degrees C) for 20 minutes. Sprinkle with additional Parmesan cheese before serving.
