- 1 large eggplant, sliced into 1/4-inch thick rounds
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 3 tablespoons olive oil
- 1/2 cup marinara sauce
- Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
- In a shallow bowl, mix together the flour, eggs, bread crumbs, Parmesan cheese and Italian seasoning. Season with salt and pepper.
- Dip each eggplant slice into the flour mixture to coat both sides. Place on the prepared baking sheet.
- Drizzle olive oil over the eggplant slices. Bake in preheated oven for 20 minutes.
- Turn slices over and bake for an additional 10 minutes. Top with marinara sauce and bake for an additional 5 minutes.
- Serve hot.
