Eggplant Parmesan…
Ingredients
  • 1 large eggplant, sliced into 1/4-inch thick rounds
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 1/2 cup marinara sauce

Steps
  1. Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  2. In a shallow bowl, mix together the flour, eggs, bread crumbs, Parmesan cheese and Italian seasoning. Season with salt and pepper.
  3. Dip each eggplant slice into the flour mixture to coat both sides. Place on the prepared baking sheet.
  4. Drizzle olive oil over the eggplant slices. Bake in preheated oven for 20 minutes.
  5. Turn slices over and bake for an additional 10 minutes. Top with marinara sauce and bake for an additional 5 minutes.
  6. Serve hot.
