Eggplant Parmesan…
Ingredients
  • 1 large eggplant, cut into 1/4-inch thick slices
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a shallow bowl, mix together the flour, eggs, bread crumbs and Parmesan cheese.
  3. Season with salt and pepper.
  4. Dip each eggplant slice in the mixture, coating both sides.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Fry the eggplant slices until golden brown on both sides.
  7. Place on a baking sheet and bake in preheated oven for 15 minutes or until tender.
  8. To assemble sandwiches: Place a slice of fried eggplant on a roll or bun. Top with desired condiments and serve.
