- 1 large eggplant, cut into 1/4-inch thick slices
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 3 tablespoons olive oil
- Preheat oven to 375 degrees F (190 degrees C).
- In a shallow bowl, mix together the flour, eggs, bread crumbs and Parmesan cheese.
- Season with salt and pepper.
- Dip each eggplant slice in the mixture, coating both sides.
- Heat the olive oil in a large skillet over medium heat.
- Fry the eggplant slices until golden brown on both sides.
- Place on a baking sheet and bake in preheated oven for 15 minutes or until tender.
- To assemble sandwiches: Place a slice of fried eggplant on a roll or bun. Top with desired condiments and serve.
