Edamame Succotash
Ingredients
  • 2 tablespoons olive oil
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 3 cups fresh or frozen edamame (soybeans),
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons freshly squeezed lemon juice

Steps
  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 4 minutes.
  3. Add the bell pepper and cook for an additional 2 minutes.
  4. Stir in the smoked paprika and cayenne pepper and cook for 1 minute.
  5. Add the edamame, salt, and black pepper. Cook for 5 minutes.
  6. Stir in the lemon juice. Serve warm.
