- 2 tablespoons olive oil
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 3 cups fresh or frozen edamame (soybeans),
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons freshly squeezed lemon juice
- Heat the oil in a large skillet over medium heat.
- Add the onion and garlic and cook until softened, about 4 minutes.
- Add the bell pepper and cook for an additional 2 minutes.
- Stir in the smoked paprika and cayenne pepper and cook for 1 minute.
- Add the edamame, salt, and black pepper. Cook for 5 minutes.
- Stir in the lemon juice. Serve warm.
