- 4 hard boiled eggs, peeled and chopped
- 2 tablespoons mayonnaise
- 1 tablespoon yellow mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- In a medium bowl, mash the eggs with a fork.
- Add the mayonnaise, mustard, vinegar, garlic powder, salt and pepper. Mix until combined.
- Spread the egg salad onto two slices of bread. Top with lettuce and tomato if desired.
- Serve immediately.
