Curry
Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes with juice

Steps
  1. Heat oil in a large pot over medium heat. Add onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  2. Stir in curry powder, cumin, coriander, turmeric, and cayenne pepper; cook for 1 minute more.
  3. Pour in the vegetable broth and diced tomatoes with juice. Bring to a boil; reduce heat to low and simmer for 15 minutes.
  4. Serve over cooked rice.
