Curry Chicken Mas…
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger root
  • 2 teaspoons ground cumin
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 3 boneless skinless chicken breasts, cubed
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 1/2 cup plain Greek yogurt

Steps
  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Stir in the garlic and ginger and cook for 1 minute.
  4. Stir in the cumin, garam masala, turmeric and cayenne pepper.
  5. Add the chicken cubes and cook until lightly browned on all sides.
  6. Stir in the diced tomatoes with juice and bring to a simmer.
  7. Reduce heat to low and simmer for 10 minutes or until chicken is cooked through.
  8. Stir in yogurt just before serving.
