- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger root
- 2 teaspoons ground cumin
- 1 teaspoon garam masala
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (or to taste)
- 3 boneless skinless chicken breasts, cubed
- 1 (14.5 ounce) can diced tomatoes with juice
- 1/2 cup plain Greek yogurt
- Heat the oil in a large skillet over medium heat.
- Add the onion and cook until softened, about 5 minutes.
- Stir in the garlic and ginger and cook for 1 minute.
- Stir in the cumin, garam masala, turmeric and cayenne pepper.
- Add the chicken cubes and cook until lightly browned on all sides.
- Stir in the diced tomatoes with juice and bring to a simmer.
- Reduce heat to low and simmer for 10 minutes or until chicken is cooked through.
- Stir in yogurt just before serving.
