Curried Vegetables
Ingredients
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger root
  • 1 tablespoon curry powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 2 cups cauliflower florets
  • 2 cups diced potatoes

Steps
  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion, garlic and ginger; cook and stir until lightly browned.
  3. Stir in the curry powder, cumin, coriander and turmeric; cook for 1 minute.
  4. Add the cauliflower and potatoes; cover and cook for 10 minutes or until tender.
  5. Serve hot.
