- 1 cup quinoa
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon honey
- Salt and pepper to taste
- 2 cucumbers, diced
- 2 tomatoes, diced
- Cook quinoa according to package instructions.
- In a small bowl, whisk together olive oil, red wine vinegar, honey, salt and pepper.
- In a large bowl, combine cooked quinoa with cucumbers and tomatoes.
- Pour dressing over salad and mix until evenly coated.
- Serve immediately or chill in the refrigerator for up to 2 days.
