Ingredients
  • 1 cup quinoa
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 2 cucumbers, diced
  • 2 tomatoes, diced

Steps
  1. Cook quinoa according to package instructions.
  2. In a small bowl, whisk together olive oil, red wine vinegar, honey, salt and pepper.
  3. In a large bowl, combine cooked quinoa with cucumbers and tomatoes.
  4. Pour dressing over salad and mix until evenly coated.
  5. Serve immediately or chill in the refrigerator for up to 2 days.
