- 1 cup uncooked couscous
- 2 cups boiling water
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/4 cup chopped red onion
- In a medium bowl, combine the couscous, boiling water, olive oil, salt and pepper.
- Stir together and let sit for 5 minutes.
- Fluff with a fork and stir in the cucumber, tomatoes and red onion.
- Serve chilled or at room temperature.
