Ingredients
  • 1 cup uncooked couscous
  • 2 cups boiling water
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/4 cup chopped red onion

Steps
  1. In a medium bowl, combine the couscous, boiling water, olive oil, salt and pepper.
  2. Stir together and let sit for 5 minutes.
  3. Fluff with a fork and stir in the cucumber, tomatoes and red onion.
  4. Serve chilled or at room temperature.
