- 2 cucumbers, peeled and diced
- 1/4 cup red onion, finely diced
- 1/4 cup white vinegar
- 2 tablespoons olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
- In a bowl, combine the cucumbers and red onion.
- In a separate bowl, whisk together the vinegar, olive oil and sugar.
- Pour the dressing over the cucumber mixture and season with salt and pepper.
- Toss to combine.
- Chill for at least 30 minutes before serving.
