- 1 cucumber, peeled and cut into thin strips
- 1/4 cup cooked rice
- 3 tablespoons finely chopped red bell pepper
- 2 tablespoons finely chopped green onion
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Place the cucumber strips on a cutting board.
- Arrange the cooked rice, bell pepper, and green onion on top of the cucumber strips.
- Roll the cucumber strips around the filling and secure with toothpicks.
- Heat sesame oil in a large skillet over medium-high heat.
- Add the cucumber rolls to the skillet and cook until golden brown on all sides.
- Season with salt and pepper to taste.
