- 2 tablespoons butter
- 1/2 cup chopped onion
- 1/2 teaspoon salt
- 3 cups chopped fresh asparagus
- 3 eggs
- 1/2 cup half-and-half or light cream
- 1/4 teaspoon ground nutmeg
- 1 cup shredded Swiss cheese
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a skillet over medium heat. Add onion and salt; cook and stir until onion is tender.
- Add asparagus; cook and stir for 5 minutes.
- In a bowl, whisk together eggs and half-and-half. Stir in nutmeg, cheese, and asparagus mixture.
- Pour into an ungreased 9 inch pie plate.
- Bake for 25 minutes, or until set.
- Let stand for 10 minutes before serving.
