Crustless Asparag…
Ingredients
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 3 cups chopped fresh asparagus
  • 3 eggs
  • 1/2 cup half-and-half or light cream
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded Swiss cheese

Steps
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt butter in a skillet over medium heat. Add onion and salt; cook and stir until onion is tender.
  3. Add asparagus; cook and stir for 5 minutes.
  4. In a bowl, whisk together eggs and half-and-half. Stir in nutmeg, cheese, and asparagus mixture.
  5. Pour into an ungreased 9 inch pie plate.
  6. Bake for 25 minutes, or until set.
  7. Let stand for 10 minutes before serving.
