- 2 large potatoes, peeled and shredded

- 2 tablespoons olive oil, divided
- In a medium bowl, combine the potatoes, flour, baking powder, salt, garlic powder, onion powder and paprika.
- Add 1 tablespoon of olive oil and mix until combined.
- Heat the remaining tablespoon of olive oil in a large skillet over medium heat.
- Using your hands or a spoon, form 2-inch patties with the potato mixture and place them in the hot skillet.
- Cook for 3-4 minutes per side until golden brown.
- Serve warm with your favorite toppings.
