Ingredients
  • 2 slices of sourdough bread
  • 1/2 avocado, mashed
  • 1 egg
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Steps
  1. Toast the bread.
  2. In a small skillet, heat the olive oil over medium heat. Crack the egg into the skillet and season with salt and pepper.
  3. Cook for 3-4 minutes until the egg is cooked through.
  4. Spread the mashed avocado onto each slice of toast.
  5. Top with the egg and serve.
