- 2 slices of sourdough bread
- 1/2 avocado, mashed
- 1 egg
- 1 teaspoon olive oil
- Salt and pepper to taste
- Toast the bread.
- In a small skillet, heat the olive oil over medium heat. Crack the egg into the skillet and season with salt and pepper.
- Cook for 3-4 minutes until the egg is cooked through.
- Spread the mashed avocado onto each slice of toast.
- Top with the egg and serve.
