Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
Cut the tofu into 1-inch cubes and add them to a bowl. Drizzle with the olive oil and sprinkle with the garlic powder, onion powder, and smoked paprika. Toss to combine.
Transfer the tofu cubes to the prepared baking sheet and spread them out in an even layer. Bake for 25 minutes, flipping halfway through.
Meanwhile, prepare the sauce by combining the soy sauce, honey or maple syrup, and rice vinegar in a small bowl. Whisk together until combined.
When the tofu is done baking, transfer it back to a bowl and pour over the sauce. Toss to coat.
