Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
Place the chicken pieces in a shallow dish and season with salt and pepper. In a separate shallow dish, combine the flour and spices. In a third shallow dish, beat the eggs.
Dip each piece of chicken into the flour mixture to coat, then dip into the egg mixture, then finally into the panko breadcrumbs.
Place on prepared baking sheet and bake for 15-20 minutes or until golden brown and cooked through.
