Ingredients
  • 3 tablespoons olive oil
  • 2 leeks, white and light green parts only, chopped
  • 3 cloves garlic, minced
  • 5 cups vegetable broth
  • 4 large potatoes, peeled and cubed
  • 1/2 teaspoon dried thyme leaves
  • Salt and pepper to taste
  • 1/2 cup unsweetened almond milk

Steps
  1. Heat oil in a large pot over medium heat. Add leeks and garlic; cook until softened.
  2. Add vegetable broth, potatoes, and thyme. Bring to a boil; reduce heat to low and simmer for 20 minutes.
  3. Season with salt and pepper, then add almond milk.
  4. Puree soup in batches until smooth. Serve hot.
