Creamy Tomato Soup
Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14.5 ounce) can vegetable broth
  • 1/4 cup heavy cream
  • salt and pepper to taste

Steps
  1. Heat oil in a large saucepan over medium heat. Add onion and garlic; cook and stir until the onion is tender.
  2. Stir in the tomatoes and vegetable broth; bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  3. Stir in cream; season with salt and pepper.
  4. Puree soup with an immersion blender until smooth.
  5. Serve warm.
