Creamy Potato Soup
Ingredients
  • 4 potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • salt and pepper to taste

Steps
  1. In a large pot over medium heat, melt butter. Add onion and garlic and cook until softened.
  2. Add potatoes and chicken broth. Bring to a boil, reduce heat to low and simmer for 20 minutes or until potatoes are tender.
  3. In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually add milk while whisking constantly. Cook until thickened.
  4. Add the milk mixture to the potato mixture and stir until combined. Simmer for 10 minutes or until heated through.
  5. Season with salt and pepper to taste.
