- 4 potatoes, peeled and cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 3 cups milk
- salt and pepper to taste
- In a large pot over medium heat, melt butter. Add onion and garlic and cook until softened.
- Add potatoes and chicken broth. Bring to a boil, reduce heat to low and simmer for 20 minutes or until potatoes are tender.
- In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually add milk while whisking constantly. Cook until thickened.
- Add the milk mixture to the potato mixture and stir until combined. Simmer for 10 minutes or until heated through.
- Season with salt and pepper to taste.
