Ingredients
  • 6 large potatoes
  • 1/2 cup mayonnaise
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup finely chopped onion

Steps
  1. Peel and cube potatoes. Place in a large pot and cover with cold water.
  2. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 10 minutes or until potatoes are tender.
  3. Drain potatoes and place in a large bowl.
  4. In a small bowl, whisk together mayonnaise, vinegar, sugar, salt and pepper.
  5. Pour over potatoes and mix until combined.
  6. Stir in onion.
  7. Refrigerate for at least 1 hour before serving.
