- 6 large potatoes
- 1/2 cup mayonnaise
- 1/4 cup white vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup finely chopped onion
- Peel and cube potatoes. Place in a large pot and cover with cold water.
- Bring to a boil over medium-high heat, then reduce heat to low and simmer for 10 minutes or until potatoes are tender.
- Drain potatoes and place in a large bowl.
- In a small bowl, whisk together mayonnaise, vinegar, sugar, salt and pepper.
- Pour over potatoes and mix until combined.
- Stir in onion.
- Refrigerate for at least 1 hour before serving.
