- 1 pound bacon, diced
- 3 pounds red potatoes, cubed
- 1/4 cup chopped onion
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons white vinegar
- 2 tablespoons sugar
- salt and pepper to taste
- In a large skillet over medium heat, cook bacon until crisp. Drain on paper towels.
- Place potatoes in a large pot and cover with water. Bring to a boil. Reduce heat and simmer for 10-15 minutes or until tender. Drain.
- In a large bowl, combine the cooked bacon, potatoes, onion, mayonnaise, sour cream, vinegar and sugar; mix well.
- Season with salt and pepper to taste.
- Chill for at least one hour before serving.
