Ingredients
  • 8oz linguine
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 4oz mushrooms, sliced
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/2 cup vegetable broth or white wine
  • 1/2 cup heavy cream or coconut milk (for vegan)
  • Salt and pepper to taste

Steps
  1. Cook the pasta according to package instructions.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and mushrooms and cook for an additional 3 minutes.
  4. Add the oregano, basil, vegetable broth or white wine, and stir to combine.
  5. Bring to a simmer and cook for 5 minutes.
  6. Stir in the cream or coconut milk and simmer until slightly thickened.
  7. Season with salt and pepper to taste.
  8. Add the cooked pasta to the skillet and toss to coat with sauce. Serve warm.
