- 2 lbs. potatoes, peeled and cubed
- 1/2 cup diced onion
- 1/4 cup diced celery
- 1/3 cup white vinegar
- 3/4 cup vegetable oil
- 3 tablespoons sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Place potatoes in a large pot and cover with water. Bring to a boil, reduce heat and simmer for 10 minutes.
- In a medium bowl, whisk together the onion, celery, vinegar, oil, sugar, salt and pepper.
- Drain potatoes and place in a large bowl. Pour the dressing over the potatoes and stir to combine.
- Chill for at least 1 hour before serving.
