Creamy Chicken To…
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 2 (14.5 ounces) cans petite diced tomatoes with juice
  • 1 (15 ounces) can black beans, drained and rinsed
  • 1 (4.5 ounces) can green chiles, drained and rinsed
  • 3 tablespoons cornstarch mixed with 3 tablespoons cold water

Steps
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  2. Add cumin powder, chili powder and smoked paprika to the pot and stir to combine.
  3. Pour in chicken broth, chicken, tomatoes with juice, black beans and green chiles. Stir to combine.
  4. Bring mixture to a boil then reduce heat to low. Simmer for 15 minutes.
  5. Stir in cornstarch mixture until soup has thickened.
  6. Serve warm.
