- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- 4 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 2 (14.5 ounces) cans petite diced tomatoes with juice
- 1 (15 ounces) can black beans, drained and rinsed
- 1 (4.5 ounces) can green chiles, drained and rinsed
- 3 tablespoons cornstarch mixed with 3 tablespoons cold water
- Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add cumin powder, chili powder and smoked paprika to the pot and stir to combine.
- Pour in chicken broth, chicken, tomatoes with juice, black beans and green chiles. Stir to combine.
- Bring mixture to a boil then reduce heat to low. Simmer for 15 minutes.
- Stir in cornstarch mixture until soup has thickened.
- Serve warm.
