Creamy Bacon Kaleā€¦
Ingredients
  • 1/2 lb. bacon, diced
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 4 cups kale leaves, chopped
  • 1/4 cup white wine
  • 3 eggs
  • 3/4 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Steps
  1. Heat a large skillet over medium-high heat. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon and set aside.
  2. Add the onion and garlic to the skillet and cook until softened. Add the kale leaves and cook until wilted.
  3. Add the white wine to deglaze the pan and reduce by half.
  4. In a bowl, whisk together the eggs, cream and Parmesan cheese until combined.
  5. Add the egg mixture to the skillet and stir constantly until thickened. Return the bacon to the pan.
  6. Season with salt and pepper to taste.
  7. Serve hot.
