Ingredients
  • 1 lb. spaghetti
  • 2 ripe avocados
  • 1/2 cup olive oil
  • 3 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Steps
  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook until al dente.
  3. Meanwhile, in a medium bowl, mash the avocados with a fork.
  4. Stir in the olive oil, garlic, lemon juice, parsley and salt and pepper.
  5. Drain the cooked spaghetti and return it to the pot.
  6. Add the avocado mixture and toss until evenly coated.
  7. Serve warm.
