- 1 lb. spaghetti
- 2 ripe avocados
- 1/2 cup olive oil
- 3 cloves garlic, minced
- 1/4 cup lemon juice
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook until al dente.
- Meanwhile, in a medium bowl, mash the avocados with a fork.
- Stir in the olive oil, garlic, lemon juice, parsley and salt and pepper.
- Drain the cooked spaghetti and return it to the pot.
- Add the avocado mixture and toss until evenly coated.
- Serve warm.
