Creamy Asparagus …
Ingredients
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 pounds asparagus, trimmed and cut into 1-inch pieces
  • 4 cups vegetable broth
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste

Steps
  1. Heat butter in a large pot over medium heat. Add garlic, onion, and celery. Cook until vegetables are softened, about 5 minutes.
  2. Add asparagus and cook for 3 minutes. Pour in vegetable broth and bring to a boil.
  3. Reduce heat to low and simmer for 10 minutes or until asparagus is tender.
  4. Remove from heat and use an immersion blender to blend the soup until smooth.
  5. Stir in cream or half-and-half. Season with salt and pepper to taste.
  6. Serve warm.
