- 2 tablespoons vegetable oil
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 3 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 3 cups cooked white rice, cooled to room temperature
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 eggs, lightly beaten
- Heat the oil in a large skillet over medium-high heat. Add the onion, carrots, celery and garlic and cook until softened, about 5 minutes.
- Add the ginger and cook for 1 minute more.
- Add the cooked rice and stir to combine. Cook for 3 minutes.
- Stir in the soy sauce and sesame oil. Push the rice to one side of the pan and add the eggs. Scramble them until cooked through.
- Stir everything together and cook for 2 minutes more.
- Serve hot.
