Ingredients
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 3 cups cooked white rice, cooled to room temperature
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 eggs, lightly beaten

Steps
  1. Heat the oil in a large skillet over medium-high heat. Add the onion, carrots, celery and garlic and cook until softened, about 5 minutes.
  2. Add the ginger and cook for 1 minute more.
  3. Add the cooked rice and stir to combine. Cook for 3 minutes.
  4. Stir in the soy sauce and sesame oil. Push the rice to one side of the pan and add the eggs. Scramble them until cooked through.
  5. Stir everything together and cook for 2 minutes more.
  6. Serve hot.
