Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 large egg, lightly beaten
  • 3/4 cup dried cranberries
  • 3/4 cup freshly squeezed orange juice

Steps
  1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together cream, vanilla and egg until combined. Pour over dry ingredients and stir until just moistened. Fold in cranberries.
  4. On a lightly floured surface, knead dough gently 8-10 times. Form dough into an 8-inch circle about 1 inch thick. Cut into 8 wedges and place on prepared baking sheet.
  5. Bake for 15-20 minutes or until golden brown. Serve warm with orange juice.
