Couscous Salad
Ingredients
  • 1 cup couscous
  • 1/2 cup diced red bell pepper
  • 1/4 cup slivered almonds
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Steps
  1. In a medium saucepan, bring 1 1/2 cups of water to a boil.
  2. Add couscous, stir, cover and remove from heat.
  3. Let sit for 5 minutes.
  4. Fluff with a fork and transfer to a large bowl.
  5. Add bell pepper, almonds, olive oil and lemon juice.
  6. Toss to combine. Season with salt and pepper to taste.
  7. Serve chilled or at room temperature.
