- 1/2 cup couscous
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 3 tablespoons chopped fresh parsley leaves
- 3 tablespoons chopped fresh mint leaves
- 3 tablespoons chopped fresh cilantro leaves
- 1 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/2 cup crumbled feta cheese
- In a medium saucepan, bring 1 1/4 cups of water to a boil.
- Stir in the couscous and remove from heat. Cover and let stand for 5 minutes.
- In a small bowl, whisk together the olive oil, lemon juice, garlic powder, cumin and pepper.
- Fluff the couscous with a fork. Pour the dressing over the couscous and stir in the parsley, mint and cilantro.
- Add the tomatoes and cucumber. Stir in the feta cheese. Serve chilled or at room temperature.
