Ingredients
  • 1/2 cup couscous
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons chopped fresh parsley leaves
  • 3 tablespoons chopped fresh mint leaves
  • 3 tablespoons chopped fresh cilantro leaves
  • 1 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/2 cup crumbled feta cheese

Steps
  1. In a medium saucepan, bring 1 1/4 cups of water to a boil.
  2. Stir in the couscous and remove from heat. Cover and let stand for 5 minutes.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, cumin and pepper.
  4. Fluff the couscous with a fork. Pour the dressing over the couscous and stir in the parsley, mint and cilantro.
  5. Add the tomatoes and cucumber. Stir in the feta cheese. Serve chilled or at room temperature.
