- 1/2 cup couscous
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Bring 1 cup of water to a boil in a small saucepan.
- Add the couscous to the boiling water and stir.
- Remove the pan from the heat and cover with a lid. Let it sit for 5 minutes.
- Fluff the couscous with a fork and add it to a bowl.
- Add the cucumber, onion, olive oil, lemon juice, salt and pepper. Mix everything together.
- Serve chilled or at room temperature.
