- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 cup couscous
- 2 cups chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Heat oil in a medium saucepan over medium heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes.
- Add couscous and cook for 1 minute more.
- Stir in broth, salt, and pepper. Bring to a boil. Reduce heat to low, cover and simmer for 10 minutes.
- Remove from heat and let stand covered for 5 minutes. Fluff with a fork before serving.
