Couscous Pilaf
Ingredients
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 cup couscous
  • 2 cups chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Steps
  1. Heat oil in a medium saucepan over medium heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes.
  2. Add couscous and cook for 1 minute more.
  3. Stir in broth, salt, and pepper. Bring to a boil. Reduce heat to low, cover and simmer for 10 minutes.
  4. Remove from heat and let stand covered for 5 minutes. Fluff with a fork before serving.
