- 1 cup cornmeal
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg, beaten
- 1 cup buttermilk
- 3 tablespoons vegetable oil
- Preheat oven to 375 degrees F (190 degrees C). Grease an 8 inch square pan.
- In a large bowl, combine cornmeal, flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, combine egg, buttermilk and oil. Stir into dry ingredients just until moistened.
- Pour batter into prepared pan. Bake in preheated oven for 25 to 30 minutes or until golden brown.
- Cool before cutting into squares.
