Cornbread Muffins
Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, lightly beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Grease muffin cups or line with paper muffin liners.
  3. In a medium bowl, mix together cornmeal, flour, sugar, baking powder and salt.
  4. In another bowl, beat together egg, milk and oil. Stir into dry ingredients just until moistened.
  5. Fill muffin cups right to the top, and bake for 20 to 25 minutes in the preheated oven. Muffins are done when they are lightly browned.
