- 3 cups fresh corn kernels
- 1/2 red onion, diced
- 1/2 cup diced bell pepper
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
- In a large bowl, combine the corn, onion, bell pepper and cilantro.
- In a separate bowl, whisk together the olive oil and lime juice.
- Pour the dressing over the salad and toss to coat.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving.
